Rare minerals: coal (at first), silver, gold, Redstone, etc. Basically lots of horse armor, saddles, and name tags. Rare finds: the odds and ends from spawner dungeons, villager trades, rare mob drops, etc. This excludes meat, that goes in the food chests. Also, these are just the common stuff they drop, there is another chest for the rare stuff. Mob drops: I divide it by hostile and non hostile. Refined blocks and crafted materials: wood plank blocks, polished stone (granite etc), stairs slabs, fences, doors, stuff like that. Raw material blocks: various uncrafted rock, wood, sand, etc. It has room for five double chests along two walls, eight of which I use, two for bulk storage of common blocks like cobble, dirt, and coal when it gets to that point. I usually wind up with a small warehouse for storage.
